Honey Truffle Shortbread

Shortbreads always feel at home for Holidays. However, shortbread need not always be so sweet. Savory shortbread is a unique, unexpected flavor experience that compliments food well and dazzles others as a sophisticated light nibbles paired excellently with wine. Honey Truffle Shortbread

Serves: 2 -1/2 dozen shortbread cookies

Ingredients

  • 2 sticks unsalted butter, at room temperature
  • ¼ cup + 1 tablespoon granulated sugar
  • 2 tablespoons honey
  • 1-1/2 tablespoons truffle oil
  • 1 tablespoon chopped black truffle
  • 3 cups minus 1 tablespoon all purpose flour
  • ½ teaspoon sea salt or table salt

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Beat butter, sugar and honey until well combined in a mixer with a paddle attachment.
  3. Add the chopped truffle and truffle oil.
  4. Gradually add sea salt and flour and mix until it comes together like a cookie dough.
  5. Transfer dough onto a parchment paper.
  6. Roll using a rolling pin until about ¼” thick.
  7. Cut using desired cookie cutter.
  8. Lay cookies on a cookie sheet about 1 inch apart.
  9. Bake for 10-12 minutes until lightly browned.
  10. Store in a tightly covered container at room temperature for up to 3 days.

 Note: We used a fluted 2-1/4” round cutter.
