Fresh Dungeness Crab with Three Dipping Sauces

It is officially Dungeness crab season here in the Bay Area.  And for us, there’s nothing more luxuriously decadent than feasting on fresh crab. Here are tips for cracking, cleaning and serving these delectable crustaceans with a trio of terrific dipping sauce recipes.

Crab season starts about mid-November (depending on the year) and lasts through July. However it is late December and January that everyone gets crab crazy because the supply of crab seems endless and the price per pound is at its lowest. It has become a tradition here to celebrate holidays with fresh crab. I can’t tell you how many people say they celebrate Christmas with crab. Me, I celebrated Thanksgiving with crab. (It was a little untraditional but oh so delicious!)

But really, any occasion is a celebration when crab is on the menu. There are so many ways to enjoy crab but sometimes the simplest is the best: Fresh crab with an assortment of dipping sauces.

Fresh Dungeness Crab Made Easy

The best (and easiest) way to get crab is buying it from a fish monger already cooked. Full disclosure even though I am a professional cook by day, I am not a fan of killing crabs and lobsters. (I know, I am a wimp) I leave the cooking up to my trusty fish monger.

But I do love to break them down, the effort is so worth the reward.

Now once you have your crab cooked and picked, here are my favorite dipping sauces to go with the crab meat. A simple Garlic Clarified Butter dipping sauce, Avocado Wasabi Mayonnaise dipping sauce and a Curry Mustard dipping sauce; all three are very different from each other but totally delicious. Serve the crab and dipping sauce alongside a La Crema Pinot Gris and you have what might be the perfect meal.

Fresh Dungeness Crab with Three Dipping Sauces: Garlic Clarified Butter Dipping Sauce

Ingredients

  • 2 sticks salted butter
  • 2 garlic cloves

Instructions

  1. In a small saucepan over medium-low heat, melt the butter and garlic cloves. Continue to cook until all of the butter is melted and the milk solids from the butter have sunk to the bottom of the pan. Strain the butter and serve.

Fresh Dungeness Crab with Three Dipping Sauces: Avocado Wasabi Dipping Sauce

Ingredients

  • ½ avocado
  • ½ tsp wasabi
  • pinch of salt
  • 2 Tbs. mayonnaise

Instructions

  1. Mix the avocado, wasabi, salt and mayo in a blender. Taste for salt and serve

Ingredients

  • ½ tsp. curry powder
  • 1 tps. Dry mustard
  • 1 Tbs. Dijon Mustard
  • 3 Tbs. mayonnaise
  • Pinch of salt

Instructions

  1. In a small bowl combine curry powder, dry mustard, Dijon mustard, mayonnaise and pinch of salt. Taste for more salt if needed and serve
